Scalloped Potatoes

You will need:

  • 2 lbs potatoes, washed, peeled and sliced thin
  • 3 tbs butter
  • 1/4 C diced onion
  • 3 tbs white flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 12 oz. can evaporated milk
  • 1 C water
  • 1/3 cup grated Parmesan cheese
  • Optional:  about 3/4 cup diced ham

Preheat oven to 350

Grease 11 x 7 pan or 2 qt. casserole dish

Boil about 2 qts water on the stove in a sauce pan.  When the water is boiling, add the sliced potatoes.  Cook for about 5 minutes.  They will not be tender yet.  Drain and set aside.

In the same saucepan, melt the butter and saute’ the onions.  When onions are transparent, add flour, salt and pepper.  Then, gradually add the milk and water, stirring constantly.

Allow the mixture to come to a boil again, stirring frequently.  The sauce will thicken.  Stir in ham if using.  Pour sauce over prepared potatoes in the baking dish. Push potatoes around in the dish a bit to distribute sauce.

Sprinkle with Parmesan cheese.  Bake for about 30 minutes and serve hot.
