Shad roe is a perfect dish for one or two people. In other country like England, it is still sometimes eaten for breakfast, a tradition that dates back to Victorian times. In the following recipe, it is simply browned in butter and served with bacon.

1 pair shad roe

4 slices bacon

 Flour for dredging

 2 tablespoons unsalted butter

 Coarse salt and freshly ground pepper

 2 lemon quarters

 Chopped parsley for garnish


1. Poach the roes in boiling water for 2 minutes. Drain and cool.

 2. Fry the bacon until it is crisp. Drain and keep warm.

3. Dip the roes in the flour and dredge lightly, shaking off all excess. Melt the butter in a frying pan and fry the roes until they are golden on both sides. Handle carefully to prevent from splitting.

 4. Place the roes on individual heated plates, season with salt and pepper, and garnish with the bacon, lemon quarters, and parsley. Serve with hot rice or boiled mashed potatoes.
