Care to have breakfast with me?
By Joseph Parish
It goes without saying that breakfast is considered to be the most important of any of your meals. This is the meal that gets you going in the morning and keeps you going at your peak level. This is undoubtedly the meal that fuels not just your physical body but also your mind.
The human body is really a hard worker. It continues to go until it either is exhausted or you stop to refuel and rest it. Unfortunately many people fail to eat this important morning meal due to either lack of time or simply lack of appetite. Neither of these excuses holds any water in justifying the missed meal. There are many appetizing recipes that would make your mouth water if only given a chance. In addition there are a lot of foods that can be prepared beforehand and simply eaten on the go.
Pancakes are one simple and easy recipe that can be made while you wait or if necessary cooked previously and eaten on your way to work or school. Should you be bored and have free time on your hands you can generally create a rather large batch of these favorites and freeze them until such time as you need them.
This permits you to simply pop one out of the freezer and into the toaster or microwave and instantly you have the equivalent of a fresh made pancake. So as you can readily see just because you lack the time to make yourself a lavish breakfast is no excuse to not eat at all. I would like to provide you with an instant pancake mix recipe that is sure to excite your taste buds.
6 cups of flour
2 teaspoons of baking soda
3 teaspoons of baking powder
2 teaspoons of salt
2 tablespoons of sugar
To create the mixes combine all of the above ingredients in a container. Mix the combo very well and seal your container. This particular mix will last for about three months. You can either make pancakes ahead of time or keep the mix and make them as you need them. When you are ready to use your newly created mix here is a simple procedure to follow.
2 eggs that are separated
2 cups of buttermilk
4 tablespoons of melted butter or margarine
2 cups of your instant pancake mix from above
1 stick of butter
2 cups of fruit of your choice
Begin by heating a frying pan to a temperature of 350 degrees F. Now whisk the egg whites with the buttermilk together in a bowl. Take another bowl and whisk your egg yolks together with your melted butter. Combine both of the mixes into a mixing bowl. Once again whisk the combination together. You can now pour this liquid onto the pancake mix. Mix this batter together. Lightly coat your frying pan with butter and then wipe it well with some paper towels.
Carefully ladle your pancake batter into your frying pan adding your selected fruit. When bubbles appear along the edges of your pancake gently flip it over to the other side. Continue cooking your pancake for another 3 minutes. You can serve the pancake at this time or cool it and freeze it for later. This recipe will yield 12 good size pancakes.
