Well, this Danish Almond Cake is one of the traditional Christmas desserts in Denmark. It is topped with a chocolate glaze for a real treat. You Don’t have to wait until the holidays to bake it. Try making it the next time you are in the mood for almond and chocolate together. Share a slice with a friend or loved one over a cup of your favorite coffee. In a large mixing bowl, cream together 2 sticks softened butter and 1 C sugar. Add 2 large beaten eggs and mix well.
Gradually add 1 1/4 C flour that has been sifted together in another mixing bowl with 1 t. baking powder and 1/8 t. salt. Beat the cake batter thoroughly.
Add 3 t. almond extract and 1/3 C boiling water. Mix well.
Pour batter into greased and floured 9-inch or 10-inch springform pan or tube pan.
Bake at 350 degrees for 30 minutes; reduce heat to 325 degrees for the last 30 minutes. Cool 10 minutes and remove from pan to cake plate. Drizzle on chocolate glaze (next step).
CHOCOLATE GLAZE: Mix together 1/2 C powdered sugar, 1 T. cocoa powder, 1/4 t. salt, 2 drops almond extract, and 3 t. warm water. After drizzling, Decorate the top with whole blanched almonds. Serve.
