Different places have their favorite foods and honey cakes are a special part of the Christmas traditions in Ukrainian and Polish households. Many enjoy this Christmas Ukrainian Honey Cake plain and choose a buckwheat or dark high quality honey from the area they live in to use in it. In a large mixing bowl, Beat 6 large eggs with fork until light and fluffy. Add 1 C sugar gradually and mix well with wooden spoon. Add 1 C buckwheat honey or dark honey and 1 C safflower Oil. Cream together thoroughly.
In another bowl, combine with whisk, 1 C buttermilk and 2 t. baking soda; add to egg mixture and beat well. Stir in 1/4 t. salt, 1 t. cinnamon, and 1 t. cloves. Gradually mix in 3 C flour. (You can leave your honey cake plain, or add 1/2 C chopped walnuts and/or 1/2 C chopped raisins at this point if you want.)
Pour batter into a well-greased and floured tube pan (angel food cake pan) or bundt pan.
Bake at 350 degrees for 1 1/2 hours or until a toothpick inserted comes out clean. Cool for 10 minutes in pan and invert onto cooling rack. Slice and Serve with real whipped cream. Yum!
Store cake in an air-tight container. The longer the cake ages, the better it tastes!!
