My family loves pasta, be it spaghetti, ziti, macaroni or whatever. We actually designate Friday as “pasta night”. And my younger children will get semi-upset if we somehow fail to have pasta on Fridays. My wife is especially keen on lasagna, but I fret about dealing with those big, fat noodles, so she didn’t get to enjoy it as much as she would like.
A visit to her brother-in-law, an Italian fellow, enlightened me – hey, I can use other types of pasta to make lasagna, too!
“Simple” is the key to this dish; and “Healthy” is its benefit. Of course, “Delicious” is what brings people to the table.
You can get the ingredients pretty much at any supermarkets. The preparation time varies, but you can get it on the table within an hour.
I always advocate flexibility in home-cooked meals. Nothing has to be exact, that is. So use your imagination, use alternatives wherever you see fit, and more interestingly, surprise yourself and your guests!

Things You’ll Need:
- Pasta (elbow, rotini, spaghetti, ziti, etc.), 1 lb.;
- Pasta sauce, 32 oz.;
- Ground beef, 1 lb.;
- Ricotta cheese, 2 lb.;
- Parmesan cheese (grated), 4 oz.;
- Mozzarella cheese, 8 oz,;
- Eggs, 2;
- Spinach (chopped), 10 oz.;
- Corn, 10 oz.;
- Green pea, 10 oz.;
- Mushroom (bits & pieces), 4 oz.
Mix eggs and ricotta and Parmesan cheeses;
Cook pasta according to instructions on box and drain.
Brown ground beef, add pasta sauce and simmer.
In 11″ x 15″ baking pan, layer ½ of pasta on bottom, add 2/3 of beef sauce, cheese mix and vegetable mix;
Top with rest of pasta, beef sauce, cheese mix and vegetable mix.
Bake at 350oF for ½ hour;
Top with mozzarella cheese and bake for additional 30 minutes.
Serve hot with your favorite side dishes, for 8.
Tips & Warnings
- Use your desired pasta;
- Adjust ingredients according to your taste;
- Do not over-cook pasta;
- Oven and baking pan extremely hot while cooking.
