Vegan recipes.

So many people make the mistake of thinking that vegan food is bland and boring. This is not the case, there are many delicious dishes that can be made using vegan friendly ingredients.

Curried Tofu.

3oz/85g brown rice.

A small onion.

50z/140g tofu.

1 tbsp vegan margarine.

½ tsp ground cumin.

½ tsp ground coriander.

½ tsp Garam masala.

¼ tsp chilli powder.

¼ tsp turmeric.

1 tbsp Soya yoghurt.

1 tbsp tomato paste.

2 tbsp water.

Cook the rice, chop the onion, and sauté it in the vegan margarine for about 3 minutes. Drain the tofu thoroughly and then dice it.

Lower the heat on the saucepan and stir in the spices, and then stir the tofu in gently so that it is covered with the spice and margarine mixture. Add the water and stir in the tomato paste, place the lid on the pan and simmer for about 10 minutes.

Serve over the rice.


1oz/15g cornflour (cornstarch)

1 tbsp vegan margarine.

¼ pint/140ml Soya milk.

3 tsp golden syrup.

½ oz/15g vegan chocolate.

A few drops of vanilla essence

Stir the milk into the cornflour, put the mixture in a saucepan, put onto a low heat, add the margarine and stir until thickened. Remove from the heat, add the vanilla essence.

Grease the bottom of a small saucepan with a little margarine, add the golden syrup and heat gently until golden brown, be careful not to let it burn.

Quickly stir the syrup into the sauce. Put the mixture into a small bowl, cool and then refrigerate. Serve over fruit, cake, or even on its own.
