Try these three cabbage soup recipes.

Cabbage and Sausage Soup

Ingredients:

5 small link sausages, cut into pieces

1 small onion, cut into slices

2 medium white or red potatoes, cut into pieces

1 carrot, sliced

1/2 stalk celery, sliced

4 cups chicken broth

1/2 head cabbage, shredded

Directions for Cabbage and Sausage Soup:

In a large skillet cook sausage. Add onions, potatoes, carrot and celery and cook for about five minutes over medium heat. In a large saucepan, bring chicken broth to a boil. Add cabbage and mixture from the skillet to the saucepan. Cook covered for fifteen minutes. Remove cover and cook uncovered for twenty minutes until vegetables are cooked.

Cabbage and Cucumber Soup

Ingredients:

3 cucumbers

1/2 head cabbage, shredded

1 can cream of celery soup

1 cup water

Salt

Pepper

Directions for Cabbage and Cucumber Soup:

Peel cucumbers. Dice one cucumber. Process remaining cucumbers in food processor for two minutes. Mix together all ingredients in a large saucepan. Bring to a boil. Lower heat and simmer for twenty minutes. 

Cabbage and Corned Beef Soup

ngredients:

2 cups cooked corned beef leftovers

1 small onion, cut into slices

2 medium white or red potatoes, cut into pieces

1 carrot, sliced

1/2 stalk celery, sliced

4 cups chicken broth

1/2 head cabbage, shredded

Directions for Cabbage and Corned Beef Soup:

In a large saucepan, add corned beef, onions, potatoes, carrot, celery, chicken broth and cabbage. Bring this mixture to a boil. Cover the saucepan and simmer for twenty or thirty minutes. Remove cover and cook uncovered until vegetables are cooked. Add more chicken broth if necessary.
