How to Make Baked Ziti
1 pack of ziti
1 pound of ripe tomatoes
½ pound of eggplants
1 parsley leaf
2 celery sticks
1 cup of provolone cheese
1 tablespoon of butter
Grated parmesan or pecorino cheese
A pinch of salt and pepper
The baked ziti can take some time to prepare and cook about forty five minutes but the recipe is relatively simple and the following one makes for about four to six servings:
Clean the tomatoes, the eggplants, the carrot and the celery stick and even the parsley leaf well and then dry them well and cut the tomatoes and the rest of the vegetables.
In a skillet add the tomatoes, the carrot, the onion and the celery sticks and the parsley and cook at medium heat for about thirty minutes.
Then mix everything in a masher or a blender and put it back in the skillet with a tablespoon of olive oil and let the sauce reduce while adding a pinch of salt and pepper.
Then take out any of the seeds from the eggplants and cut them vertically in slices and fry them in enough hot oil, then set them aside but make sure to pat them down so the excess oil is taken out.
Now cut the ziti also vertically and cook them according to package but one minute less and drain them. And mix with half the sauce and the grated cheese.
Transfer them to a Pyrex pan and add the strips of eggplant and the provolone cheese and the butter, and place in the oven at 450 degrees Fahrenheit for five minutes before serving.
