Breakfast burritos are a good, warm, filling way to start your day.
They are packed with plenty of protein.
Kids love them because they get to eat them with their hands.
Breakfast burritos are super simple to make.
For an even more stress free morning, make up the fillings the night before and reheat in the microwave, put them in the tortilla and breakfast is done.
To make your own breakfast burritos, this is what you need:
An eight count package of burrito size flour tortillas
1 pound package of ground breakfast sausage
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped red pepper
4 large eggs
1 cup cheddar cheese- more if you really like it cheesy
To serve: taco sauce or salsa if you like
Whisk together the eggs, onion, and both peppers. Put a skillet over medium-high heat and add about a tablespoon butter or oil. When the butter is nice and hot, but not smoking add the egg mixture. Stir and cook the eggs as if you were making scrambled eggs.
Meanwhile, fry up the sausage and remove from heat. Drain.
Now, get out your tortillas. If cold, warm them in the microwave one at a time for about 30 seconds.
Lay the tortilla on a plate and down the middle add a few tablespoons of eggs, do the same with the sausage, and sprinkle with some of the cheese.
Add the salsa or taco sauce if you want and than proceed to roll up.
To do this, fold in the sides first. Now roll it up into a burrito.
If you like, substitute bacon for the sausage or maybe even add some hashbrowns.
If you plan to serve them all together, you can keep the first ones warm in the oven while you make the rest.
Heat the oven to 300 degrees Fahrenheit and put the burritos in a pan in the oven, while you get the rest of them done.
You should end up with 6 – 8 breakfast burritos.
