Got extra apples on hand? Bake them up in these special Apple Spice cookies with Vanilla Glaze. Autumn is a great time to bake these when apples are in season!
I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it.
This recipe looks great to serve to guests or family anytime. Have fun and Happy Cooking!
DRY INGREDIENTS: In a bowl, whisk together 2 C flour and 1 t. baking soda. Set aside.
CREAMED INGREDIENTS: In another mixing bowl, cream together 1/2 C shortening and 1 1/3 C packed light brown sugar. Add 1/2 t. salt, 1 t. cinnamon, 1/2 t. nutmeg, 1 t. cloves, and 1 large beaten egg. Mix until well blended.
To the creamed ingredients, stir in half the flour mixture. Mix. Next, stir in 1 C chopped walnuts, 1 C unpeeled chopped apples, and 1 C raisins.
Blend in 1/4 C. apple cider or apple juice and the rest of the flour mixture.
Drop on greased cookie sheets 2 inches apart and bake at 350 degrees for 10 – 15 minutes until golden brown. Remove from pans to cooling racks. While still warm, drizzle with Vanilla Glaze (recipe in next step).
VANILLA GLAZE: Mix together 1 1/2 C confectioners sugar, 1 T softened butter, 1/2 t. Pure Vanilla Extract, 1/8 t. salt, and 2 T. light cream.
