This Chicken salad has a fruity chinese flare to it. Try it for something different.
I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it.
This recipe looks great to serve to Brunch guests or anytime you need to take a side dish to a picnic or pot luck gathering. Try this recipe on your family too! Have fun making Chinese Chicken Salad Veronique and Happy Cooking!
You need to prepare this at least one day before you need it in order to marinate flavors.
Cook, skin, debone, and dice 1 large whole chicken breasts.
Peel, section and dice 2 medium Oranges.
In a mixing bowl, toss together chicken pieces, oranges, and 1 C halved seedless grapes.
MAKE DRESSING: In a glass jar with lid, shake together 2 T. lemon Juice, 2 T. honey, 4 T. oil, a dash of salt, and 4 T. Soy Sauce.
Pour over chicken mixture and toss. Chill overnight in airtight container to marinate flavors. Can remain chilled 2 days before serving.
Before serving, lay out lettuce leaves on a platter and layer on 1 C chow mein noodles. Spoon Chicken salad on top. Serves 4.
