Recipe for banana pancakes

This is my recipe for banana pancakes. It has been in my family a long time. You will need: 150g plain flour, 1 tsp baking powder, 2 eggs, separated, 1 tbsp caster sugar, 250mL milk, 1 tsp vegetable oil, 2 bananas, a pinch of salt, butter for the pan, Icing sugar, lemon, and maple syrup.

Sift the flour, baking powder and salt into a bowl, and make a well in the centre. In another bowl, whisk the egg yolks, sugar, milk and oil together, then pour into the dry ingredients, whisking until smooth, strain to remove any lumps, and rest in the fridge, for half an hour. After you have taken the mixture back out of the fridge, peel and slice the bananas, and stir into the batter, or if you prefer, mash the banana, and stir in. Beat the egg whites until peaky, and fold into the batter. Heat oil in a non- stick fry pan, and add a little batter at a time, cooking over a medium heat for 2 minutes, and turning once when golden brown.
