Make Polish Holupki/Golumpki or Stuffed Cabbage Rolls

These are cabbage rolls from Slovakia. If you need to make a meal from another country for a pot luck, try this. The ingredients are at your local grocery store.

I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it.

This recipe looks great to serve at an international pot luck or anytime you want to introduce foods from different lands to your family. Have fun and Happy Cooking!

  1. Step 1

    To prepare cabbage, Cut deeply around core of a 3 1/2 pound head of cabbage to loosen leaves.

  2. Step 2

    Boil head of cabbage for about 5 minutes. Take the leaves apart and set aside.

    Saute 1 chopped onion in 1 T. shortening.

  4. Step 4

    Place 2 lbs. ground chuck in a mixing bowl and mix in sauteed onions.

  5. Step 5

    MEAT FILLING: Parboil 1 C rice and add to the meat mixture. Add 1 T. salt, 1/2 t. ground black pepper, and 1 large egg to the meat mixture and mix well.

    Place tablespoonfuls of meat mixture in center of each cabbage leaf.

  7. Step 7

    Roll up filled leaf and tuck in sides.

  8. Step 8

    Place unused cabbage leaves in bottom of large 8 to 10 quart saucepan. Place cabbage rolls side by side, layer by layer, in saucepan.

  9. Step 9

    Pour 1 can tomato soup over cabbage rolls and add some water to cover rolls.

  10. Step 10

    Simmer in covered saucepan for 1 1/2 hours. Add water if necessary. Stir rolls gently with spatula to make sure they don’t stick to bottom of pan. Serve.
