Chop 6 quarts unpeeled green tomatoes and sprinkle with 1/2 C. salt. Mix well in a very large bowl. Cover with towel and Leave over night on counter. Drain liquid off well the next day.
In a cheesecloth bag, combine1 oz. whole allspice, 1 oz. whole cloves, and 1 oz. mustard seed. Tie.
In a large stock pot, Combine 4 C sugar, 2 quarts white vinegar, 1 oz. ground black pepper, 1/4 oz. ground dry mustard, and the bagged spices. Heat to boiling.
Add drained chopped green tomatoes and some chopped onions. Let simmer for 20 minutes.
Remove bagged spices with slotted spoon. Taste mixture for sweetness; add more sugar if necessary, and simmer a few minutes longer.
Pack in clean jars and seal immediately. Refrigerate if not sealed.
