Make a Layered Nacho Cheese Dorito Casserole

Dorito Casserole is a recipe I first tasted in the late 70’s at a picnic and am I ever glad I got the recipe. I love this dish! Anyone who loves Doritos, will love this casserole too. Knock-Off brands of Nacho Cheese Chips don’t taste as good either, believe me, I’ve tried it!.  Once your family eats it, they will ask for it again and again!

I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it. This recipe looks great to serve to guests or family anytime. Step 1

Roughly Crush one bag of Nacho Cheese Doritos into bite-sized pieces.

Step 2

In a large skillet, brown 1 lb. lean ground beef or chuck with 1 small chopped onion and 2 t. chili powder. Drain off fat.

Step 3

Add 1 can of undrained Brook’s Chili Hot Beans and simmer until liquid is reduced, hot, and thickened.

Step 4

In a 2 quart casserole, layer 1/2 the meat mixture, 1 C shredded SHARP cheddar cheese and half the crushed Doritos. Repeat.

Step 5

Bake in a 350 degree oven for 20 minutes. Serve hot.  NOTE:  We like to have an extra bowl of crushed Doritos to sprinkle on the casserole in order to keep it crunchy because the meat mixture will soften the chips.
