Think summer! This light, hearty Salmon Dill Pasta salad is pretty to the eyes, but bound to fill you too. It will make you feel healthy inside too!  Bring this Salmon Dill Pasta salad recipe to a spring or summer ladies brunch or tea and don’t forget the recipe, as you may be asked for it!

I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it.

Step 1

BOIL PASTA: Cook 8 oz. of colored Rotini pasta according to package directions and make sure pasta is al dente. Drain and rinse with very cold water. Drain again. Transfer cold, drained pasta to a large mixing bowl.

Step 2

Add 1 C chopped onion, 1 C chopped celery, 1 chopped tomato, and a 14 oz. can of red salmon. Mix well to combine.

Step 3

MAKE DRESSING: In a smaller bowl, mix together with small whisk, 2/3 C mayonnaise, 2 T. Grey Poupon mustard, and 6 T. chopped fresh dill OR 4 T. dried dill.

Step 4

Pour dressing all over the pasta mixture and gently toss together to combine. Put salad in the refrigerator to chill. Serve cold.
