You may be able to get kids to eat this salad since their favorite meat is the main ingredient. It is definitely different, nonetheless, someone out there may be trying to find this recipe, so here it is!
I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it.
This recipe looks great to serve at kid’s parties or a summer picnic or anytime. Have fun and Happy Cooking!
In a bowl, mix 1/2 C Italian Salad Dressing, 1/4 C ketchup, 1 T minced onion, and 1 t. mustard together. Mix well.
Cut 1/2 lb. small zucchini diagonally into slices. Slice 1 package of hot dogs into coin-sized pieces. Cut 1 medium carrot into bite-sized pieces. Combine zucchini slices, hot dog coins, carrot pieces into a mixing bowl with an 8 oz. can quartered whole new potatoes.
Pour dressing mixture over vegetables and hot dogs mixture. Cover and refrigerate for 3 hours, stirring occasionally.
Line salad bowls with some big, pretty green lettuce leaves and set aside.
Place salad mixture into prepared salad bowls and sprinkle on some grated cheese of your choice. NOTE: There is no need to heat the hot dogs unless you want to.
