This is a colorful Red and Green Christmas Salad made with Sauerkraut, green pepper celery, pimentos. You don’t have to wait for the holidays to make it. It’s healthy and easy to do, so put it on your menu this week, or wait until the holidays and start a new tradition at your dinner table.

Plan ahead to make this salad the day before you need it to allow flavors to marinate and chill in refrigerator overnight.
Wash and drain THREE 14 oz. cans of sauerkraut. Put the sauerkraut in a large saucepan with 1 1/2 C sugar and cook and stir with wooden spoon until sugar is dissolved.
In a large mixing bowl, pour in 1/2 C oil, 1/2 C white vinegar, 1 chopped green pepper, 1/4 C chopped celery, 1 small chopped onion, and 1 small jar red pimentos. Combine and stir well.
Pour the sauerkraut mixture over the vegetable mixture and stir well. Chill salad overnight to allow flavors to marinate together for full flavor. Serve the next day. Serves 8 – 12.
