I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it.
This recipe looks great to serve to guests at a brunch or tea or anytime. Have fun and Happy Cooking!
WHAT YOU’LL NEED:
- 20 oz. package of thawed frozen raspberries
- 1 1/4 C water
- 1/4 C white wine
- 1 C Ocean Spray Cran-Raspberry Juice
- 1/2 C sugar
- 1 1/2 t. ground cinnamon
- 3 whole cloves
- 1 carton of Raspberry Yogurt
- sour cream
- fresh raspberries
In a blender, puree a 20 oz. package of thawed frozen raspberries with 1 1/4 C water, and 1/4 C white wine (optional). Transfer to a large saucepan.
Add 1 C Ocean Spray Cran-Raspberry Juice, 1/2 C sugar, 1 1/2 t. ground cinnamon, and 3 whole cloves. Bring to just a boil over medium heat, stirring often.
Remove from heat; strain and allow to cool. Whisk in 1 carton of Raspberry Yogurt. Refrigerate.
To Serve, pour into small bowls and top with a dollop of sour cream and a fresh raspberry to garnish. Serves 4 – 6. Serve with spinach salad and rolls. Yum! A cool summer lunch or brunch!
