Make a Southern Creole Tuna Okra Gumbo

If you are from the South, you know what Gumbo is and you know what Okra is and you probably eat plenty of it! Here is a new way to fix it for your family. Try Southern Creole Tuna Okra Gumbo this week!

I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it.

This recipe looks great to serve to guests or anytime. Have fun and Happy Cooking!

Step 1

In a large pot, melt 2 T. butter. Add 1 medium chopped onion, 1 medium chopped green pepper, and 1 clove minced garlic.

Step 2

In a mixing bowl, combine 1 T. flour and 1 can chicken broth. Mix thoroughly with whisk. Add to onion and green peppers, stirring constantly.

Step 3

Pour 1 can whole tomatoes with liquid into a bowl. Crush tomatoes with a potato masher.

Step 4

Add 1/4 C fresh chopped parley, 1/2 t. salt, 1/4 t. thyme, and 1 bay leaf. Bring to a boil. Cover and simmer for 30 minutes.

Step 5

Add 12 oz. can drained Tuna, and a 10 oz. canned cut Okra to sauce. Simmer for 10 more minutes.

Step 6

Stir in 1 t. fresh lemon juice, 1 1/2 t. worcestershire sauce, and a dash of cayenne pepper. Serve Gumbo over rice.
