Things You’ll Need:
- 2 cups flour
- 1/3 cup sugar
- I stick butter
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup raisins, currents, or craisins
- 1 egg
- 1/2 cup plain yogurt or sour cream
- food processor
Heat oven to 400 F.
Add 2 cups of white or wheat flour (or combination), 1/3 cup sugar, 1 tsp baking powder, 1/4 of baking soda and 1/2 tsp salt to the bowl of your food processor.
Add one stick of cold butter and blend until the dough starts to stick to the sides of the bowl and the butter is completely mixed in. It should look like fine granules.
In a medium sized bowl, mix yogurt (or sour cream) with one egg.
Add the dough in the food processor to the yogurt/egg mixture. Add raisins or other dried fruits.
Mix with a fork until everything sticks together.
Turn dough out onto a well-floured surface. It would be a good idea to flour your hands as well. Form the dough with your hands and flatten it into a 1/2 inch thick slab (shape isn’t important).
Cut the slab of dough into rectangle or triangle shaped pieces. You should get about 8 scones from one batch. Place the scones onto a cookie sheet (lining w/ parchment paper is nice, but not necessary). Sprinkle with a bit more sugar on top, if desired. Bake for 15-18 minutes.
