These fruitcake cookies are great to serve at Christmas parties!
I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it.
This recipe looks great to serve to guests at Christmas parties or anytime you get a notion to bake them. Have fun and Happy Cooking!
In a large pan, place 1/2 lb. chopped candied cherries, 1/2 lb. chopped candied pineapple, 3/4 box golden raisins, 6 oz. fresh-frozen coconut, 12 oz. chopped dates, and 1 C chopped pecans. Sprinkle 1 C self-rising flour over fruit mixture and stir until all are coated with the flour. SEt aside.

In another bowl mix together: 2 sticks softened butter, 1 C packed light brown sugar, 4 large beaten eggs, 3 T. buttermilk, 1/2 C sour cream, 2 T. orange juice concentrate, 1 1/2 C self-rising flour, 1 t. baking soda, 1 t. Pure Vanilla Extract, and any spices desired.
Pour batter over floured fruit mixture and mix thoroughly.
Spray cookie sheets with cooking spray and drop mixture by teaspoonfuls on the sheet. Bake at 275 degrees until golden brown, about 25 – 30 minutes. Yields around 100 cookies.
