So you want to make something quick and different for dinner tonight? Read on. This recipe fro Beef and Snow Pea Casserole is healthy and fast. I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it. This recipe for Beef and Snow Pea Casserole looks great to serve to guests or anytime. - Step 1
Cut a slit in a 7 oz. package of frozen snow peas. Place package on a paper towel in the microwave oven. Microwave at high (100% power) for 3 minutes. Turn package over, microwave for 2 more minutes. Remove from microwave oven; let stand. You can use a package of fresh snow peas too and cook according to package directions. I prefer the fresh, myself.
- Step 2
Put 1 lb. lean ground beef in a 1 1/2 quart microwavable casserole dish; break into small pieces with spoon. Mix in 1/2 C thinly sliced green onions.

Drain snow peas; spread over meat in an even layer.

In a bowl, combine 1 can Campbell’s Cream of Mushroom Soup, 1 T. Soy Sauce, and 1/8 t. freshly ground black pepper; pour over snow peas.

Microwave covered at medium (50% power) for 14 – 15 minutes or until meat is no longer pink when cut in the center. Let stand 5 minutes, covered.

While meat stands, pour a 3 oz. can of chow mein noodles on a platter. Microwave noodles at high (100% power) for 1 1/2 minutes; sprinkle these on top of casserole before serving. Makes 4 – 6 servings.
