Make a Blue Ribbon Winner Lemon-Honey Cheesecake

This is a wonderful dessert to serve at a Ladies Tea or Luncheon. Make this Blue Ribbon winning Lemon-Honey Cheesecake for a bit of sunshine and Spring in your day! It is best when aged for 2 or 3 days, so plan ahead!! I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it. This recipe looks great to serve to guests or anytime. Have fun and Happy Cooking!

  1. Step 1

    MAKE CRUST: Combine well 3 C graham cracker crumbs, 1 stick melted butter, and 3 T. honey in a bowl.

  2. Step 2

    Press graham cracker mixture in the bottom of a springform pan. Chill in the refrigerator.

  3. Step 3

    In a mixing bowl, whip on highest speed 3/4 C honey and 2 large egg whites with an electric mixer until fluffy. Set aside. Reserve the 2 large egg yolks for the next step.

  4. Step 4

    In another mixing bowl, beat with electric mixer, THREE 8 oz. packages of softened cream cheese until light.

  5. Step 5

    Add the two large egg yolks and 2 more large eggs, 2 t. Pure Vanilla Extract, 2 t. fresh squeezed Lemon Juice from 1 lemon, and 3/4 C honey in this order, whipping thoroughly with electric mixer on high speed.

  6. Step 6

    Pour filling into prepared crust. Bake for 45 minutes at 350 degrees. Remove from oven and immediately Refrigerate cheesecake for 10 minutes to bring temp. down somewhat. Increase oven temperature to 400 degrees.

  7. Step 7

    PREPARE TOPPING: In a mixing bowl, combine 2 C Sour Cream and 1/4 C honey.

  8. Step 8

    Pour honey topping over cheesecake and return to the 400 degree oven for 5 minutes to bake topping onto cheesecake.

  9. Step 9

    Cool cheesecake for 45 – 60 minutes on a cooling rack, then refrigerate cheesecake. Before serving, carefully remove outer rim of springform pan and set cheesecake on a cake platter. Slice with very sharp long knife. Best served when very cold, also, Cheesecake is best when aged for 2 – 3 days. Serve with a thin slice of lemon on the side for garnish. Serves 12.
