This healthy Herb Roasted Orange Salmon combines salmon steaks baked with a freshly squeezed orange juice marinade. Try it! I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. MAKE MARINADE: In a bowl, combine 2 T. Extra Virgin Olive Oil, finely grated zest of 1 orange, 1/4 C freshly squeezed orange juice, 2 t. minced garlic, 2 t. dried tarragon, and Salt and coarsely ground black pepper to taste. Mix well.
MARINATE SALMON: Put 4 (8 oz. each) Salmon Steaks in a big gallon-sized ziplock bag and pour the marinade in the bag over salmon steaks. Close bag. Let Marinate at room temperature for at least 1 hour.
Preheat oven to 475 degrees.
Place the salmon steaks in a ovenproof dish and pour marinade on top. Bake for 7 – 8 minutes or until salmon is just cooked though. Turn and bake 7 – 8 minutes more. Salmon should flake easily when tested with a fork.
Carefully remove salmon steaks to a serving platter and pour marinade over. Sprinkle each piece with snipped fresh chives. Place a thinly sliced orange on each plate too. Serves 4.
