Everyone likes Mary Tyler Moore. She’s a wonderful actress. She is also a Type 1 Diabetic. This recipe is from an old cookbook I have and I wanted to share it with ehow users in case anyone is looking for Mary’s recipes or Diabetic friendly recipes. Basically, I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it. This recipe looks great to serve to guests or anytime no matter if you are diabetic or not. It is healthy. In a large non-stick skillet, steam-cook 2 large diced onions and julienned slices of 2 large green peppers in some Beef bouillon (sorry, recipe doesn’t say how much) until onions and peppers are soft. Remove onions and peppers from skillet and into a large stock pot.
Add to same skillet, 2 lbs. ground round and saute’ until cooked. Drain off any fat.
Add browned beef to the large stock pot. Add 2 Cans Campbell’s Tomato Soup, 4 soup cans of water, 1 (16 oz.) bag broad egg noodles, and 1 T. tomato paste. Boil all until noodles are soft.
Add 2 (16 oz. each) cans whole kernel corn (sorry, recipe doesn’t say anything about draining or not), and some sliced ripe olives. Mix well.
Pour all into a large casserole. Sprinkle with grated fresh Parmesan or Romano cheese (or both) and bake uncovered at 375 degrees for about 30 – 45 minutes or until brown and sides bubble. Yields 16 Servings.
