Here is a recipe to Make Classic Beef Burgundy. This recipe is a great way to learn about French Cuisine. Classic Beef Burgundy is nutritious and can be served over hot cooked rice or noodles. Don’t forget the French Bread too!! I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. In a hot large skillet, brown 1 lb. well-trimmed beef round cut into 1 inch cubes in 1 T. Olive Oil.
Add to the skillet 1/2 t. salt, 1/8 t. ground black pepper, 1 bay leaf, 1/8 t. thyme, and 1 1/2 C water.
Simmer, covered, until beef cubes are almost tender, about 1 3/4 hours. Remove Bay leaf.
Add 1 1/2 C diced potatoes, 1 C sliced carrots, 1/2 C diced celery, 1/3 C chopped onion, and 1 C sliced fresh mushrooms. Simmer, covered, until vegetables are tender, about 20 minutes.
In a small bowl, mix together 2 T. flour and 1/4 C water with whisk until smooth. Add slowly to meat mixture, stirring gently; cook until thickened.
Stir in 1/3 C Burgundy Wine. Garnish with fresh Parsley. Serve over Rice or Noodles. Yeilds 4 servings.
