This is a recipe on how to Grill London Broil Teriyaki with Skewered Vegetables. So fire up the grill and get started. I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it. This recipe looks great to serve in the summer to guests or anytime. Have fun and Happy Cooking!
- Step 1
Preheat the Grill.
- Step 2
Make the Teriyaki sauce in a small saucepan by combining 1 C Soy Sauce, 1/4 C Extra Virgin Olive Oil, 1/4 C Apricot Jam, 4 t. Cornstarch, 1/4 t. ground black pepper, and 1 t. minced garlic. Stir to blend, then bring to a boil over medium heat, stirring constantly. Remove from heat.
- Step 3
Brush a 2 lb. (1 1/4″ thick) top round London Broil steak with the hot teriyaki sauce. Grill the steak 4″ from the heat source, turning once and brushing the second side with teriyaki sauce.
- Step 4
GRILL TIMETABLE: Grill the steak 5 – 7 minutes per side for RARE, 8 – 10 minutes per side for MEDIUM-RARE, and 11 – 13 minutes per side for WELL DONE.
- Step 5
Meanwhile, take 12 medium fresh mushroom caps, 24 cherry tomatoes, and 12 small sweet onions and divide evenly. Thread them onto skewers.
- Step 6
About 4 minutes before meat is done the way you like it, brush the skewered egetables with some teriyaki sauce and place them on the grill for 6 minutes. (They will grill 2 minutes longer after the meat is removed.)
- Step 7
Cut the meat accross the grain and on the diagonal into thin slices. Serve with skewered vegetables and Wild Rice.
- Step 8
