Here is a recipe on how to Make Stuffed French Toast with Homemade Apple Cider Syrup. This is comfort food at its best. Yum! I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. You need to make this the night before it is needed because of refrigeration time to soak bread overnight.
Cut 1 loaf of French Bread into cubes to make 12 Cups of cubes total.
Grease a 10 X 15 inch glass pan with butter. In the prepared baking dish, place half (6 Cups) of the french bread cubes.
Cut an 8 oz. package of Cream cheese into cubes. Put the remaining 6 Cups of french bread cubes on top of cream cheese cubes.
In a mixing bowl with electric mixer, beat together 8 large eggs, 2 1/2 C Half-N-Half, 6 T. melted butter, and 1/4 C. homemade Apple Cider Syrup (recipe below) until well combined. Pour this mixture evenly over the bread and cream cheese cubes. Using a spatula, lightly press layers down to moisten. Cover with plastic wrap and refrigerate overnight.
When ready to bake, remove plastic wrap from baking dish. Bake in a 325 degree oven for 35 – 40 minutes or until the center appears set and the edges are lightly golden. Let stand about 10 minutes before serving. Serve with Homemade Warm Apple Cider Syrup (recipe below). Makes 6 – 8 Servings.
MAKE APPLE CIDER SYRUP: In a small saucepan stir together 1/2 C sugar, 4 t. cornstarch, and 1/2 t. ground cinnamon. Then stir in 1 C Apple Cider (or Apple Juice), and 1 T. Lemon Juice. cook and stir the mixture over midium heat until mixture is thickened and bubbly. Then cook and stir for 2 minutes more. Remove saucepan from heat and stir in 2 T. butter until melted. Serve Warm. Makes about 1 1/3 Cups of Syrup.
