Bake a Strawberry-Rhubarb Coffee Cake

Here is a recipe for Strawberry-Rhubarb Coffee Cake, so get started today!  I am putting up recipes from my vast collection that are unusual, hard to find, or are just different in case any searchers are looking for hard to find recipes they remember from childhood that are lost. So far, the recipes I’m putting up are getting lots of views, so I will keep going at it. This Strawberry-Rhubarb Coffee Cake looks like a great summer recipe to serve to brunch guests or anytime.   1. Step 1

    Preheat oven to 350 degrees. Brush a 9 X 13 glass pan with some softened butter and set aside.

  2. Step 2

    MAKE FRUIT SAUCE: Combine 1/4 C freshly squeezed lemon juice (about 2 lemons), 1/3 C. cornstarch, and 1 C sugar in a medium saucepan.

    Add to saucepan, 1 lb. hulled sliced strawberries 1 1/2 lbs. trimmed rhubarb cut into 1″ pieces.

    Cook, stirring frequently, over medium heat until rhubarb is soft and liquid has thickened (15 – 20 minutes). Transfer to a medium bowl; let cool.

    MAKE CRUMB TOPPING: Combine 3/4 C sugar and 3/4 C flour in a medium bowl. Melt 1/2 stick of butter in a small saucepan over low heat. Drizzle butter over flour misture; using your hands, mix until crumbly. Set aside.

    MAKE CAKE BATTER: Whisk together in a large mixing bowl, 3 C flour, 1 C sugar, 1 t. baking powder, 1/2 t. baking soda, and a pinch of salt.

    Using a pastry knife or two forks, cut 2 sticks of cold butter into flour mixture until it resembles coarse meal.

  8. Step 8

    In a separate bowl, mix 2 large eggs, 1 1/2 C buttermilk, and 1 t. Pure Vanilla Extract. Pour into flour mixture; stir to combine.

    ASSEMBLE COFFEE CAKE: Spread half the cake batter evenly into the prepared pan. Top with half the fruit sauce. Carefully spread the remaining batter over the fruit, and top with the remaining fruit sauce. Sprinkle with crumb topping.

    BAKE until cake is golden brown and springs back when touched in the center – about 1 hour. Transfer pan to a wire rack to cool slightly. Serve warm or at room temperature, cut into squares. Enjoy!
