How to Make Low Fat Chicken Jambalaya
Ingredients for the chicken jambalaya
4 ounces low fat smoked sausage chopped
1 medium chopped onion
½ a pound of chicken breasts (with no fat on them)
½ a medium green bell pepper
½ a medium red bell pepper
1 cup of long grain rice
3 minced garlic cloves
1 teaspoon of salt free extra spicy seasoning blend
½ teaspoon of thyme
½ teaspoon of dried oregano
1 can of diced tomatoes (undrained and no salt added)
¾ cup of fat free low sodium chicken broth
Red hot chili pepper sauce (optional)
This recipe for chicken jambalaya makes for about four servings and it is not hard to make at all and jambalaya is a great way to spice up chicken and with this recipe it makes it healthier without compromising the taste.
The first thing is to get a Dutch oven and spray it with non stick spray and cook over medium heat for thirty seconds and then add the sausage and the onion and cook on medium high for three minutes.
Next add to the mixture the chicken and the bell peppers and cook for five minutes, stirring frequently and at this point reduce the heat to medium low.
Then add the rice, garlic, the thyme, oregano and the can of tomatoes and the seasoning blend, and bring to a boil on medium high heat.
Reduce the heat to low and simmer with a lid on for twenty minutes, before serving you can add the red hot chili pepper sauce.
