Step 1 Preheat oven to 350 F. Grease the desired pan. I like 9 x 9 for a thicker casserole. Some people might like to use a large pan for a thinner casserole.

Step 2 Combine shredded cheese, egg (fake or real), evaporated milk, salt and pepepr in a large bowl. Add the shredded potatoes, chopped onion, chopped bell pepper and sliced bacon, ham or sausage (if using). Mix well to combine.

Step 3 Pour into prepared baking dish.

Step 4 Bake at 350 for 60-65 minutes or until set.

Step 5 Serve hot with an assortment of fruit, yogurt and granola, juice and coffee.
