Heat oven to 550 F. Mix all ingredients in a medium bowl at once. Do not over-mix.

When the oven is just about ready, begin heating the oil in the skillet on to of the stove, or put it in the oven to heat. This is a very important step!

When you think the skillet has become quite hot, pour the batter on top of the hot oil in the skillet. The oil will begin cooking the sides immediately and may flow over to the top. This is ok and will make for a nice tasty, crispy crust

Bake for about 10 minutes. Watch closely! The oven is HOT!

Remove carefully from the oven. Iron skillets are heavy and this one is HOT! Place it on top of the stove and allow to cool for a minute or two.

Serve hot with plenty of butter or jelly.
