Using your favorite pancake mix, make a batch for about 10 pancakes. Add about 1/4 cup of chocolate syrup and mix until chocolate syrup is blended with batter. Add about 6 ounces of milk chocolate chips. Spoon onto griddle. Cook until golden brown on each side (make sure pancake is done before serving). Top with butter, cool whip and syrup or any combination. You can also spread peanut butter on your pancakes and make a “Reese Cup” pancake.
1. Apple Pancakes ~ Make the same as above except replace step #3 & #4 with 1 tablespoons of cinnamon, 1/2 tablespoon of nutmeg and 1/2 cup of diced apples. Top with caramel and cool whip.
2. Banana Pancakes ~ Make the same as above except replace step #3 & #4 with 1 medium banana, ripe and mashed (If you want chunks of banana add an extra banana sliced where the choc. chips are added for the above pancakes. Top with slicesof banana, caramel and cool whip.
3. Peach Pancakes ~ Do the same as Apple Pancakes only replace the apple with peaches and leave out the nutmeg. Top with caramel and a light dusting of cinnamon.
4. Mandarin Orange Pancakes ~ Make the same as above except replace step #3 & #4 with 1/2 a can (about 7 ounces) of Mandarin Oranges (drained). You can top these with a drizzle of the canned Mandarin Oranges and cool whip or Karo syrup.
This makes a fun snack for after school if you eat late in the evenings. To make them a snack, make your pancakes smaller more bite sized put the syrup on the side for dipping. Serving this with a side of fruit (strawberries work well) also helps your kids to eat some fruit.
