Fruited Pork Chops

This recipe is great for special occasions as well as for a family treat at dinner time. This recipe is very easy to prepare and doesn’t take a lot of time or effort to do so. I myself tend to steer clear of meat and fruit combinations, as they aren’t always my favorite, but this one is just to good to pass up.

2 Tablespoons of Olive Oil
1 1/2 Pounds of Pork Chops
1 Can of Chicken Broth
2 Tablespoons of Soy Sauce
1 Tablespoon of Vinegar
1 Small Apple, Cubed
4 Small Orange Slices
¼ Cup of Apple Juice
¼ Cup of Orange Juice
2 Tablespoons of Brown Sugar
2 Tablespoons of Cornstarch
1 Teaspoon of Ginger
Sliced Green Onion
Cooked Rice

In a large skillet put your olive oil and pork chops. Cook the chops until they are browned on both sides. Stir in the chicken broth, the soy sauce, and the vinegar. Heat this until it is boiling. Reduce heat to a simmer and cover your skillet. Cook the chops for about 20 minutes, or until they are tender. When the Pork Chops are done, remove them from the pan. In a small bowl mix your juice, brown sugar, cornstarch and ginger. Stir this juice mixture into the chops pan with the drippings and heat to a boil. Add the apple cubes and cook until they are tender. Add the orange slices about the last minute or so. Serve chops with cooed rice, smothered in fruit sauce and top with sliced green onions.
