Cheesy Meatloaf

This wonderful recipe is both easy and yummy. Cheesy meatloaf can be served well with just about any veggie, though I usually go with corn. There are a good deal of potato farms in the area that I live in, and I love to get new red potatoes to serve with this but again any kind will taste great.

2 Pounds of Ground Beef
1 Can of Cheddar Cheese Soup
½ Cup of crushed Saltine Crackers
1 Egg, Beaten
1 Tablespoon Soy Sauce
¼ Cup Green Olives
½ Cup of Water

In a large bowl, mix the meat, half of the soup, crackers, eggs, olives, and soy sauce. Form the meat mixture into an eight inch baking pan and bake at 350 degrees for one hour and fifteen minutes. When the meat is fully cooked, take it out of the oven and remove to a plate. Heat 3 tablespoons of the drippings from the meat, remaining soup, and water over medium heat stirring constantly. Serve meatloaf covered in sauce.
