2-Fantastic marinades- made easy

For aproximately 1 cup of marinade you will need:

Tomato Onion Marinade:

  1. 1/2 c tomato juice
  2. 1/2 c olive oil
  3. 3 Tbls lemon juice
  4. 1/4 c onion slices
  5. 2 Tbls minced parsley
  6. 1 Sm clove garlic minced
  7. 1/2 tsp each; dried oregano, thyme leaves.
  8. Sea salt and fresh ground black pepper

Combine all ingredients in a large flat glass baking dish. Mix well. Add the meat of your choice. Turning the meat  a couple of times to evenly coat. Cover and refridgerate for several hours or overnight, turning meat occasionally. Next day – Drain marinade. Save. Set oven to broil or barbeque meat to desired doneness, spooning marinade over meat often during the cooking process.

Lemon Herb Marinade:

  1. 1/2 c lemon juice
  2. 1/2 c olive oil
  3. 1/4 c finely chopped onion
  4. 1/2 tsp dried rosemary, crushed
  5. 1 bay leaf, broken
  6. 1/4 tsp fresh ground black pepper

Combine all ingredients in a saucepan. Bring to boil. Simmer for 5 minutes. Cool. When cool, add meat of your choice, turning to coat evenly. Cover and refridgerate for several hours or overnight, mixing occasionally. Next day-Drain.  Save. Broil or barbeque meat to desired doneness, basting often with the drained juices.

Tip: 1 cup marinade is sufficient for apx. 2 Lbs. cubed meat. Always use a glass, porcelain or enameled dish for marinades.
