Enchiladas

Here’s what you’ll need, you may add other spices than listed to achieve your desired flavor:

  1. 1-2 tablespoons olive oil
  2. 1 cup ground meat
  3. 1 small onion chopped
  4. 1/2 teaspoon garlic powder
  5. 1 tablespoon taco seasoning
  6. 1/2 teaspoon chili powder
  7. 1/2 cup taco sauce
  8. 1 cup refried beans
  9. 8 ounce cream cheese
  10. 1 lb yellow cheese(either chunk and grate yourself or get grated)
  11. 1 jar taco sauce
  12. tortillas(soft shell preferrably)

Preheat oven to 350 degrees.

Heat olive oil in fry pan and add the ground meat(can be beef or turkey whichever you prefer), the onion, garlic powder, taco seasoning and chili powder. Saute until browned. Add taco sauce and refried beans and heat for twin minutes before setting aside. 

Spread tortilla with cream cheese. Add 3-4 tablespoons meat bean mixture. Top with grated yellow cheese. Roll up and set into casserole dish. Spread taco sauce on top and sprinkle with cheese when removed from oven. Bake for about 20 minutes or until your desired doneness.

As always, comments and feedback are welcomed. I would not recommend eating more than maybe 2 of these as they seem to be rather rich and have caused some stomach upset to my friends who think they can eat as much of anything they want, although they only got to 3 before they became a bit unsettled. Just my hint of advice, though you are more than welcome to challenge yourself just don’t blame me when you get a tummy ache. Haha. Also, it may just be my kids, but these aren’t too popular among younger people, I’m not sure if it’s the spices or not, but my kids don’t like them, although my husband and our friends love them.
