You’ve heard of GORP, right? Good Ole Raisins and Peanuts. Here is a recipe I found in an old Rubbermaid Cookbook for a dessert type pizza that uses the ingredients from GORP. If you love GORP, you’ll love this pizza. Make it and take it to your next camping trip or make it at home on a rainy day and eat it under a “tent” in the living room. Have fun and happy baking!
FOR CRUST: In a glass pitcher, Sprinkle 1 envelope of yeast over 1 C very warm water. Stir in. Add 2 t. honey. Stir. Let set 10 minutes until frothy. Stir in 1 T. vegetable oil. In a mixing bowl, pour in the yeast mixture. Stir in 1 C whole wheat flour and 1 C flour, and 1 t. salt with wooden spoon. Stir well to form dough. Knead for 10 minutes on floured surface, adding more flour if necessary. Sprinkle a 15 inch pizza pan with corn meal and spread dough out to fit pan. Let dough rest 15 minutes. Turn oven to 450 degrees. Bake crust for 15 – 20 minutes. Let cool. (If you want, you could use a store bought pizza crust OR even use sugar cookie dough for the crust if you wanted it to be sweeter.)
TOPPING: Combine in a mixing bowl, 1 C peanut butter, and 1/4 C honey; spread over cooled crust. Sprinkle 1/4 C sweetened flaked coconut all over. Sprinkle on 1/2 C raisins, 1/4 C sesame seeds, 1/8 C sunflower seeds, 1/3 C chopped walnuts, 1/2 C semi-sweet chocolate chips, and mini marshmellows. (Recipe says to top with 2/3 C mozzarella cheese, but I would leave it off, myself). Bake again for 10 minutes. Serve warm.
