Salmon with grapes

Things You’ll Need:

  • servings for 4 people
  • 4 large or 8 smaller salmon fillets or pieces.
  • salt and pepper
  • thyme
  • 2 tbsp of butter(40 gr.)
  • 1 and 1/2 cups of white wine
  • 1 tbsp of flour
  • 1/4 pint of milk
  • 3 tbsp of light or heavy cream
  • 1 and 1/2 of cup of green grapes
  • 1 lemon
  • 1/5 of a cup of olive oil

Step 1

we are going to start with roll or fold the fillets or pieces of salmon and put them into a greased(OLIVE OIL)baking dish and season with salt pepper and a sprinkle of thyme.

Step 2

Pour into the dish half of the butter and the wine.Also add the grapes, cover and cook in a moderate heat about 350 degrees for about 20 minutes.Meanwhile heat the remaining butter in a saucepan, stir in the flour and continue stirring over a low heat for about 2-3 minutes.

Step 3

Add the milk and bring to a boil and stir until the sauce thickens.Lift the salmon into a hot plate and strain the remaining liquid from the fish into the sauce . Stir in the cream and heat again without boiling pour over the baked salmon serve and garnish with sliced lemon and some grapes……and buon appetito.

This dish is a “delish” that goes well served with sauté asparagus or green beans. And like always we cannot serve this without a bottle of Chardonnay any from California will be an excellent choice.

And one more thing if you decide to make this ENTREE` please do not forget of a piece of bread, you only need a slice or two  but it has to be a tuscan bread ……Enjoy
