Sauté` Di Zucchini

Things You’ll Need:

  • serves 4 people
  • 4 pounds of zucchini
  • 1/4 of cup olive oil
  • 1 garlic clove sliced
  • 50 grams of parmiggiano reggiano cheese
  • salt and pepper

Step 1

Wash the zucchini and cut the ends, when finished start to cutting to make 3/4 of an inch squares even 1 inch squares, cut all of them. when you shop for the zucchini try to find big zucchini a lot easy to Work with and the taste is the same.

Step 2

In a large Frying pan pour the olive oil and sauté` the Garlic, Golden brown without burning it, when ready add the zucchini slowly making sure the pan is big enough.

Step 3

To cook them, have the heat on medium constantly, and be there so you can mix it up every minute or 2 so they don’t burn a lot . A glass of wine near will help you focus (at least that is what i do) . after 4 – 5 minutes add Salt and Pepper.

Step 4

After you added salt you will see the Zucchini watering a little let them cook for about 20-25 minutes and when you see the Water mostly gone add the Parmiggiano Reggiano In Italy the zucchini are a treat veggie, because it is a seasonal veggie and we also use the flower that come with it (see my fried zucchini flowers recipe) the more you cook them the soft they will get,  I like them burned a little IR IS  just a preference, But it’s your meal to eat and cook so…… you make it the way you want it!
