White rice, peas and onions make a tasty side dish with any meal. Preparing rice, peas and onions is fairly inexpensive and it takes less than 15 minutes. Make sure you purchase only fresh peas from your local supermarket or grocer.
You will need 1 box of instant rice, 1 package of fresh peas, 1 large Spanish onion diced, 3 tablespoons butter, and 1 can of chicken or beef stock. Depending on what else you are serving will determine weather or not you use chicken or beef stock. If you are serving the rice with meat then you should use the beef stock, if you are having chicken or fish then you should use chicken stock.
Empty contents of chicken or beef stock in medium saucepan, when broth begins to boil add rice according to directions. Cover rice with lid and remove from stove, let rice simmer in broth until it is absorbed. You can use plain chicken or beef broth however; the stock gives your rice a much richer and smoother taste. Stock tends to have less preservatives or salt added.
You made add 1-teaspoon garlic powder, 1-teaspoon salt, 1-teaspoon black pepper and 1 teaspoon paprika for additional flavor. I normally refrain from adding salt or pepper and I leave the spices to individual taste preference.
Add diced onion, peas and for some extra flavor add 1 package of sliced mushrooms. You should simmer the mushrooms and peas with some butter and ½ cup of white wine for about 3 minutes before adding it to the cooked rice. Enjoy!!
