Preparing homemade chicken matzo ball soup is easy and delicious. Hot soup really hits the spot in the cold winter months. There are several variations of recipes for chicken soup. You can always add different ingredients so that your soup has a special and unique taste.
You will need 3 large chicken breasts (bone in), 3 cans of chicken stock, 2 celery stalks diced. 1 diced Spanish onion, 1 teaspoon sea salt, 1 teaspoon pepper, 1 teaspoon garlic powder, 2 bay leaves, 1 cup diced carrots, 1 jar of matzo balls with broth added.
In large pot place chicken breasts, cover with water and bring to boil, boil chicken for about 30 minutes until broth is produced. Drain chicken broth through a colander and place broth and cooked chicken aside.
Next, add carrots, diced celery and onion to chicken broth and place on medium heat, add 3 cans of chicken stock, garlic powder, salt, pepper and add entire contents of matzo balls with the broth.
Simmer on medium heat for 20 minutes. You can add some egg noodles or pasta if desired. In addition, you can add some fresh parsley as a final garnish. Serve hot. Enjoy!! The nice thing is that chicken soup can be frozen up to three months and still tastes delicious.
Spanish onion provides more flavor than other types of onions. However, you can use regular onion. In addition, if you don’t want to use egg noodles, you can use ay kind of pasta that would go well with chicken soup.
Finally, you can substitute the chicken stock with plain chicken broth. Chicken stock gives te soup a much richer taste however, chicken stock is a bit more expensive. Enjoy!!
