I have a very old cookbook typed up by Rubbermaid Employees (not dated, but probably done in the 1960’s or 1970’s according to the way cooking was mentioned. There is no instruction for microwave cooking anywhere in the 527 page book.) I figured Bukisa users may be looking for Wild Game Recipes, so I want to share the ones in this recipe book in case any Wild Game hunters out there happen to need some at some point. I personally don’t eat Wild Game, but that doesn’t stop me from sharing the recipes I have with someone who does. This recipe is for cooking Wild Turkey in 2 ways: roasted and baked. ROAST WILD TURKEY: Wash and thoroughly dry a 10 – 12 pound dressed wild turkey. Rub cavity with salt, pepper and a dash of garlic powder. Place 1 quartered onion, 3 ribs celery with tops, and some bay leaves in cavity. Place bird in roasting pan breast side up and cover with pork skin to keep well basted. cover. Roast in oven at 325 for 3 to 4 hours. Remove pork skin during last 30 minutes to brown turkey.
BAKED WILD TURKEY: Quarter 2 small dressed Wild Turkeys. Brush pieces with honey. Dust with salt and pepper to taste. Place in shallow baking dish. Bake in hot oven at 450 degrees for 30 minutes, basting often with melted butter. In a bowl, mix togther, 1/2 C chopped onion, 1 C white wine, 3 T. honey, 1/2 stick melted butter, 1/2 C chicken broth, and 1 t. parsley flakes. Pour over turkey. Reduce heat to 250 degrees. Cover and continue baking about one more hour. Baste several times with sauce in pan.
