I have a very old cookbook and am sharing this recipe. If you are looking for a moist cake recipe made with yams, look no further. It has a great filling and sprinkled powdered sugar on top for a pretty presentation. Take it to your next gathering for something different from the usual fare. Here it is! Enjoy. In a large mixing bowl, blend with whisk, 2 C flour, 1 1/2 t. baking soda, 1/2 t. cloves, 1 t. salt, 1 1/2 t. cinnamon, and 1 t. nutmeg.
In another mixing bowl, combine 2 C sugar and 1 1/4 C oil. Mix thoroughly. Add 4 large eggs, 1 at a time, beating well after each addition. Add 2 t. pure vanilla extract.
Add dry ingredients to wet ingredients and mix well. Add 2 C mashed cooked yams (can use canned or real), and 1/2 C chopped pecans; Mix thoroughly.
Spoon batter into a greased tube pan or bundt pan. Bake at 350 degrees for 1 hour and 15 minutes. Cool for 10 minutes and invert onto cake plate to cool.
MAKE FILLING: In a mixing bowl, cream together 1/2 stick softened butter and 3 oz. softened cream cheese. Stir in 1/2 box of powdered sugar, 1/2 t. Pure Vanilla Extract, and 1/2 C chopped pecans.
When cake cooled, Use thread or dental floss to split cake horizontally into two layers.
Spread filling between cake layers. Sprinkle additional powdered sugar on top. Slice and serve. Enjoy!
