Make a Louisiana Yam Crown Cake

I have a very old cookbook and am sharing this recipe. If you are looking for a moist cake recipe made with yams, look no further. It has a great filling and sprinkled powdered sugar on top for a pretty presentation. Take it to your next gathering for something different from the usual fare.  Here it is! Enjoy. Step 1

In a large mixing bowl, blend with whisk, 2 C flour, 1 1/2 t. baking soda, 1/2 t. cloves, 1 t. salt, 1 1/2 t. cinnamon, and 1 t. nutmeg.

Step 2

In another mixing bowl, combine 2 C sugar and 1 1/4 C oil. Mix thoroughly. Add 4 large eggs, 1 at a time, beating well after each addition. Add 2 t. pure vanilla extract.

Step 3

Add dry ingredients to wet ingredients and mix well. Add 2 C mashed cooked yams (can use canned or real), and 1/2 C chopped pecans; Mix thoroughly.

Step 4

Spoon batter into a greased tube pan or bundt pan. Bake at 350 degrees for 1 hour and 15 minutes. Cool for 10 minutes and invert onto cake plate to cool.

Step 5

MAKE FILLING: In a mixing bowl, cream together 1/2 stick softened butter and 3 oz. softened cream cheese. Stir in 1/2 box of powdered sugar, 1/2 t. Pure Vanilla Extract, and 1/2 C chopped pecans.

Step 6

When cake cooled, Use thread or dental floss to split cake horizontally into two layers.

Step 7

Spread filling between cake layers. Sprinkle additional powdered sugar on top. Slice and serve. Enjoy!
