To make this delicious soup you will need the following ingredients:
2 cups broccoli (chopped into bite size pieces)
2 cups water
2 chicken bouillon cubes or equivalent powdered bouillon
1 cup cream or milk (my family prefers cream for a richer soup. Even evaporated milk is a great choice)
1/2 cup chopped onion
1/2 cup finely chopped celery
1 medium sized carrot shredded
garlic to taste
salt and pepper to taste
2 to 3 cups shredded cheddar cheese or a combination of cheddar and monteray jack cheese (My family likes the processed American Cheese you can buy in the box in the cheese section of your grocery store)
In olive oil gently stir chopped onion, chopped garlic and celery til just done. Add chopped broccoli and the 2 cups water, simmer till broccoli is bright green. Stir in bouillon, shredded carrot and begin to add the shredded cheese a small amount at a time allowing it to melt. Continue adding cheese until you have all of it in the soup. Add the cream or milk at this stage and turn your soup to simmer. Simmer gently til serving time. Season with salt and pepper to taste.
A delicious alternate version to this is to add 1 cup of cooked rice (I just toss in leftover rice from a previous meal). This makes for a heartier soup.
Serve with toasted garlic cheese squares and you have the full meal deal. My family loves this soup especially on a cool fall day.
Garlic Cheese Squares:
6 slices bread
butter or margarine
Slice bread on the diagonal. Butter each slice and sprinkle with garlic granules or garlic and add a generous portion of Parmesan cheese. Sprinkle with a bit of sea salt and broil until toasted brown. Serve warm.
