This summer sausage salad is a favorite amongst many Swiss. The sausage used is called Cervela. It is a true Swiss Sausage. It is described as a truly fat hot dog with a skin. You might be able to find it in a Swiss Delicatessen Store. Or you might find something similar in a German Delicatessen Store. Otherwise you may substitute it with over-sized hot dogs or hot dog type sausages available at German Grocery Stores. Don’t use Bratwurst or other sausages as it will alter the taste.
4 cervela sausages or fat German hotdogs
True Cervelas will have a thin skin, which needs to be removed. Cut the sausage in half first, lengthwise, then follow-up by cutting thin slices, about 2 mm in thickness. They should look like thin half circles.
2 bell peppers, green and yellow
200 g of Emmentaler Cheese
half an onion
Emmentaler Cheese is also referred to as Swiss Cheese. Cut all ingredients in cubes except for the onions which need to be cut into small rings. Mix everything well with the cut-up sausages.
For the salad dressing:
1 teaspoon mustard
half a teaspoon salad spices black pepper
3-4 tablespoons vinegar
4 tablespoons olive oil
The dressing should be sour as the sausage will offset the taste. Once you have mixed the salad, try one piece. If it isn’t sour enough, you may still add some more vinegar, but don’t overdo it. You might want to chose a special brand vinegar to give the dressing an additional kick. Stir all ingredients well and pour over the salad.
2-4 hard-boiled eggs
Cut eggs in four equal pieces each. Decorate salad with eggs and sprinkle with chives. Serve with a good crispy bread. This salad can be prepared several hours in advance. Refrigerate. Remove it from refrigerator about 30 minutes before serving.
