How to prepare shrimp curry

Shrimp curry is a dish in which you must have an acquired taste. Any size shrimp can be used for this dish. Smaller shrimp are alot less expensive but the taste is the same. There are several ways to prepare shrimp curry. The ingredients are usually the same but depending on where it’s being prepared a few ingredients will either be substituted for or omitted from the dish completely. Some of the ingredients in this recipe may seem a bit odd but it’s actually tasty. Chopped bananas are recommended in this recipe but it is also common to use raisins, chopped cucumbers, mango or pineapple chutney, and shredded coconut. Odd as it may sound some people even use Fried onion rings. The following recipe is how shrimp curry is prepared in East Africa.

In a 4 Quart Saucepan
Sauté
1 Cup Chopped Onion

1 Garlic Powder
1 Tbs. Curry Powder
1 tsp. Tumeric
1 Tbs. Salt
1/2 tsp Chili Powder
2 oz. Butter Until Soft (don’t allow it to get brown) 

Add
1Cup Coconut Cream
2 lbs. Shrimp peeled and uncooked
2 Cups Diced Potatoes
1 Cup Of Water

Simmer For about 20 minutes, tightly covered 

Add
2 oz. Lemon Juice
1 Cup Coconut Cream
If you desire less lemon taste you can use half of the lemon juice recommended. 1 oz

Cook For about 10 Minutes Until It’s Slightly Thick
Don’t overcook it because after it turns thick it will turn sticky if you cook it too long. 

Serve Hot with rice and accompaniments in a large dish

Raisins
Shredded Coconut
Chopped Bananas
Chopped Cucumbers
