With the majority of households both parents are working to make ends meet. This can leave very little time for cooking a nourishing meal. I have found a superb way to prepare sliced roast beef with gravy and red skinned mashed potatoes within less than 30 minutes.
You will need 2-3 pounds of sliced roast beef (luncheon counter fresh roast beef with no preservatives will suffice), 2 cans of beef gravy, ½ stick of butter, ½ cup white wine, 12-15 red skinned potatoes, 1 cup fresh mushrooms.
In medium skilled place mushrooms with 2 tablespoons butter, ½ cup white wine, 1-teaspoon salt, 1-teaspoon pepper. Sauté mushrooms for about 10 minutes place aside. In large saucepan place sliced roast beef, add 2 can gravy, and add sautéed mushrooms, simmer on medium heat for about 10 minutes, cover with lid.
For mashed potatoes, peel some of the skin from the red skinned potatoes, leave some skin on, slice into small pieces, place in sauce pan with cold water, when water comes to a boil, place on medium heat allow to cook for about 15 minutes, remove and place in colander to drain excess water. Place potatoes in large mixing bowl, add butter, salt, pepper, 1-cup whole milk, and beat with mixer for about 2 minutes. You mad add extra butter, salt if desired.
Place roast beef slices on serving dish, pour hot gravy over meat and serve with mashed potatoes. You will have one tasty meal. Adding the mushroom to the gravy makes a tasty difference. You can prepare this meal within 20-25 minutes.
